I want to make pancakes from scratch. Does anyone have a homemade recipe that I can add extras? My son loves chocolate chip pancakes!
Continue to make the pancakes how you do and you can add any of the following:
add in finely shredded carrot, cinnamon, ginger, nutmeg and vanilla to make Carrot Cake Pancakes
add in some oats and dried raisins to make Oatmeal Raisin Pancakes
add mint extract and chocolate chips to make Mint Chocolate Chip Pancakes
add in ginger, cinnamon, cloves and molasses to make Gingerbread Pancakes
add brown sugar and cinnamon to make Snickerdoodle Pancakes
Makes 10-12 pancakes
1 cup flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
Dash of salt
1 cup buttermilk
3 tablespoons melted butter
In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda and salt. Using a whisk or large fork, mix in the buttermilk and egg until well combined and smooth. Stir in the melted butter.
Heat non-stick skillet or griddle over medium heat. Using a 1/4 cup measure, pour pancake batter onto hot griddle. When pancake is golden brown, and bubbles appear, flip to cook other side.
** Homemade buttermilk: Place a tablespoon of white vinegar or lemon juice in a glass measuring cup, and add enough milk to make 1 cup total liquid. Stir to combine and let stand for 10-15 minutes (the mixture will begin to curdle). Use as needed in a recipe, or cover and refrigerate as needed.
Variations: Blueberry and banana pancakes: Stir in 1 cup fresh berries into batter, or any other variation you may like.
Erica, I have an electric griddle that we use for pancakes. It holds 4-5 pancakes at a time, more if you make them smaller. Very easy to use and cleanup is a cinch, because it is a non stick griddle.
