Jackie, I like to steam broccoli and cauliflower.  When done, I make a dressing with the Good Seasoning Italian dressing package.   Pour that over the combined vegetables.  It makes for a delicious side dish.  Of course, you have to like broccoli and cauliflower.  Steamed asparagus makes a nice side dish also.  Sweet potato casserole is another favorite of mine.

I have been experimenting with different vegetables for side dishes that I need to bring to parties and events this Thanksgiving.  I have two personal favorites that are very easy to make.  The first one you saute some olive oil cut up 2-3 yellow squash and zuchinni.  Add in half a chopped up onion and add a little garlic salt and cracked pepper.  I put a lid half on half off to release some steam.  It takes about 5-10 minutes and the veggies are very flavorful and delicious.  The next veggie I made by mistake.  I sauted some garlic with olive oil and added lots of spinich.  I make a chicken dish with cream of mushroom and cream of chicken.  I mixed some of the cream mixture with the spinich and made cream spinich.  It's kind of along the same lines as the typical green bean casarole.  It was delicious!
