Anyone have a easy and tasty recipe for chili made in a crock pot? Not to spicy please.

This is a recipe I learned from my mom and my sister in law.  I kind of tweaked it and made it my own.  I usually make large batches on the stove but I have made smaller versions in the crock pot.

  • Cook on the stove top 1 pound of lean ground beef. I throw in about half a cup of chopped onions with the meat and then drain. 
  • Put the meat and onions in the slow cooker. Add in about three cans of stewed tomatoes (I use the one with herbs, I believe it's an Italian stew tomatoes), 2 cans of pinto beans, 2 cans of dark kidney beans, and 2 cans of light kidney beans.  The best part of this recipe is that you can add more of one bean, or use white beans, this recipe works with any bean combination. 
  • Then I add a mix I buy at Safeway.  It's called Carroll Shelby's Original Texas Brand Chili Kit.  I add dry mix from that minus the salt and the masa flour.  I prefer a soupier chili. 
  • Throw in some ground chilies for a little kick!  Simmer on high and when it starts to boil set the crockpot on low.  Simmer for as many hours as you like.  I usually simmer a good 2-3 hours.  When it's close to being done I add salt for taste.

my recipe is similar, but I fry up chorizo and through that in the chile also! Delicious!
