Ingredients
3 lbs. (9 medium) zucchini
2 tbs. olive oil
4 cloves Fresh CHRISTOPHER RANCH California Garlic, minced
1/8 tsp. (scant) dried red chili flakes
1/8 tsp. salt
Pepper to taste
Directions
Wash the zucchini, trim off the stem ends, and cut into 1/2-inch slices.
Place zucchini on a steamer rack in a large saucepan that has a tight-fitting lid.
Add about an inch of water, cover, and cook over high heat for 8 minutes, until almost fork tender.
Heat the olive oil in a skillet over medium heat and sauté the garlic, chili flakes, salt, and pepper for about 1 minute.
Drain the zucchini and add to the skillet.
Cover, reduce heat to low and cook about 5 to 6 minutes, tossing frequently to coat all sides with the oil and seasonings. Serve immediately.
