Yuca with Garlic Mojo

Ingredients

  • 2 pounds yuca root, peeled and cut into bite-sized pieces
  • 1/8 teaspoon salt
  • 3 tablespoons olive oil
  • 6 cloves roasted garlic
  • 2 tablespoons lemon juice
  • 1/4 cup whole cilantro leaves, chopped
  • 1 organic red bell pepper, chopped

Directions

  1. In a large saucepan, cover yuca with water with 2 inches above the yuca.
  2. Add salt and bring to a boil.
  3. Lower heat to a simmer, cover, and let simmer until yuca is fork-tender but still intact.
  4. Drain yuca.
  5. Heat olive oil in large skillet over medium heat.
  6. Add yuca and stir occasionally for 5 minutes.
  7. Add garlic and lemon juice; toss to coat vegetables evenly.
  8. Cook for 2 minutes.
  9. Add cilantro and bell pepper and toss just to mix.
  10. Transfer to a warm serving platter.
