Yam and Apple Casserole

Ingredients

  • 3 organic yams
  • 2 1/2 baking apples
  • 1/4 cup sugar
  • 1/2 cup orange juice
  • 1/8 cup butter
  • 3/4 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1/2 tablespoon ground cinnamon
  • 1/2 tablespoon nutmeg
  • 1 tablespoon macadamia nuts, toasted

Directions

  1. Boil yams until barely tender (whole or cut widthwise in big pieces).
  2. Peel yams and cool. When cool, slice.
  3. Layer yams and peeled apple rings in buttered casserole dish.
  4. Boil the sugar, water, butter, cornstarch and salt until the mixture begins to thicken.
  5. Pour the sauce over yams and apples, and sprinkle with cinnamon, nutmeg and nuts.
  6. Bake covered at 350 degrees F for 1 hour. Serve.
