Watermelon Ginger Ale Cooler

This is a good drink if your stomach is feeling uneasy because the ginger will settle it down.

Ingredients

  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 1/2 tablespoons ginger root, chopped
  • 6 cups mini watermelon, cubed
  • 1 cup organic lime juice, freshly squeezed
  • 32 ounces ginger ale
  • Ice cubes as needed

Directions

  1. Place water and sugar in a sauce pot and bring to low simmer to dissolve sugar. Set aside.
  2. In batches, puree watermelon and fresh ginger.
  3. Strain through a fine sieve into a large pitcher.
  4. When cooled, add sugar water.
  5. Stir in lime juice and ginger ale.
  6. Pour over fresh ice and serve.
