Verdolagas Salad with Balsamic Vinegar image

Ingredients

  • 2 bunches verdolagas, washed and ends trimmed
  • 10 cherry tomatoes, halved
  • 1/2 sweet onion, thinly sliced
  • Balsamic vinegar to taste
  • Salt and freshly ground pepper to taste

Directions

  1. Remove the leaves from the verdolagas and chop the stems.
  2. Place the leaves and stems in a bowl and add the tomato and onions.
  3. Season with the salt and pepper and drizzle with balsamic vinegar.
  4. Toss to combine and serve.
