Summertime Apple Pie

Ingredients

  • 1 pre-made pie crust, frozen
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour (for filling)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 8 Granny Smith apples, peeled, cored and sliced (1/4 inch thick)
  • 2 tablespoons unsalted butter (for filling)
  • 1 cup all-purpose flour (for topping)
  • 1/2 cup unsalted butter, chilled and cut into small pieces (for topping)
  • 1 piloncillo (brown sugar cones), crushed
  • Caramel dessert sauce to taste

Directions

  1. Preheat oven to 350 degrees F.
  2. To make the filling, in a large bowl, combine the sugar, 2 tablespoons flour, cinnamon and nutmeg.
  3. Add the apples and mix well. Set aside.
  4. To make the topping, in a bowl, add the 1 cup flour, the 1/2 cup butter and brown sugar.
  5. Using a fork or a pastry cutter, mix until crumbly, like coarse meal.
  6. To assemble, pour the apple mixture into the pie crust and dot with the 2 tablespoons butter.
  7. Sprinkle with the topping and place in the oven.
  8. Bake for 45 minutes to 1 hour or until crust is golden brown and apples are cooked through. Let cool.
  9. Place 1 pie wedge on a plate, drizzle with caramel sauce and add a scoop of vanilla bean ice cream.
