Stewed Prunes and Apricots (Zurracapote)

Ingredients

  • 1 cup full-bodied red wine
  • 1 cup water
  • 1 cup brown sugar, firmly packed
  • 1 stick canela (cinnamon sticks)
  • 1/2 pound dried prunes
  • 1/2 pound dried apricots
  • 1/2 lemon, peel only

Directions

  1. In a saucepan, place the wine, water, brown sugar, cinnamon, and lemon peel; bring to a boil, then simmer 5 minutes.
  2. Add the prunes and apricots; cover and simmer 15 minutes. Turn off the heat.
  3. Let the fruit sit at least 2-3 hours in the syrup. Serve warm, alone, or over your favorite cake or frozen dessert.
