Spring Salad with Radicchio, Watercress, Belgian Endive and Romaine image

Ingredients

  • 1 cup radicchio, washed, trimmed and chopped
  • 1 cup watercress, washed, trimmed and chopped
  • 1 cup Belgian endive, washed, trimmed and chopped
  • 1 cup organic Romaine lettuce, washed, trimmed and chopped
  • 1/2 cup organic Fuji apples, washed and chopped
  • 1/4 cup goat cheese, crumbled (optional)
  • 2 tablespoons pine nuts, toasted

Directions

  1. Combine all salad greens and apples.
  2. Toss with your favorite salad dressing (raspberry vinaigrette or a blue cheese dressing recommended).
  3. Top salad with pine nuts and goat cheese.
