Spicy Cucumber-Avocado Soup

Ingredients

  • 2 whole firm and ripe organic avocado
  • 1/2 hot house cucumbers (English cucumbers), cut into 1/2-inch pieces
  • 8 ounces plain low-fat yogurt
  • 3 tablespoons chives, chopped
  • 1 teaspoon key lime juice, freshly squeezed
  • 1 teaspoon salt to taste
  • 1/2 teaspoon jalapeno chile, chopped with seeds
  • 1 cup ice cubes
  • Organic avocado, diced (for garnish)
  • Chives, chopped (for garnish)

Directions

  1. Peel and pit avocado.
  2. Blend all ingredients in a blender until very smooth, about 1 minutes. Serve.
