Soyrizo and Roasted Baby Dutch Yellow Potatoes

This makes a great healthy brunch dish.

Ingredients

  • 2 pounds Baby Dutch Yellow potatoes, washed and halved
  • Extra virgin olive oil as needed
  • Salt and pepper to taste
  • 1 package Soyrizo

Directions

  1. Preheat the oven to 425 degrees F.
  2. In a large bowl, toss the potatoes with the olive oil, salt and pepper. Roast in the oven until fork-tender.
  3. Prepare the Soyrizo per the package directions.
  4. As the Soyrizo begins to breakup, add the potatoes to the pan. Serve hot.
