Ingredients
- 2 pounds Baby Dutch Yellow potatoes, washed and halved
- Extra virgin olive oil as needed
- Salt and pepper to taste
- 1 package Soyrizo
Directions
- Preheat the oven to 425 degrees F.
- In a large bowl, toss the potatoes with the olive oil, salt and pepper. Roast in the oven until fork-tender.
- Prepare the Soyrizo per the package directions.
- As the Soyrizo begins to breakup, add the potatoes to the pan. Serve hot.
