Shrimp Salad with Avocado and Maradol Papaya

Ingredients

  • 2 Roma tomatoes, chopped
  • 1 jalapeno chile, minced
  • 1 organic lime, juice freshly squeezed
  • 1 bunch cilantro, chopped
  • 1/2 red onion, chopped
  • 1 tablespoon mango chuntney
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lime juice
  • 4 cups Boston lettuce or red leaf lettuce, torn
  • 6 ounces medium-sized or large-sized shrimp, cooked, peeled and deveined
  • 1/2 cup organic avocado, diced
  • 1/2 cup Maradol papaya, diced
  • 1/3 cup organic red bell pepper, sliced in thin strips
  • 2 tablespoons cilantro, chopped

Directions

  1. Mix first five ingredients together and set aside.
  2. Combine in a small bowl chutney, mustard and the 1 tablespoon lime juice; mix well.
  3. Add chutney mixture to tomato mixture for dressing.
  4. In medium bowl, combine remaining ingredients.
  5. Add dressing and gently toss to coat. For an elegant presentation serve salad in a half of an avocado, pit removed.
