Ingredients
2 Roma tomatoes, chopped
1 jalapeno chile, minced
1 organic lime, juice freshly squeezed
1 bunch cilantro, chopped
1/2 red onion, chopped
1 tablespoon mango chuntney
1 tablespoon Dijon mustard
1 tablespoon lime juice
4 cups Boston lettuce or red leaf lettuce, torn
6 ounces medium-sized or large-sized shrimp, cooked, peeled and deveined
1/2 cup organic avocado, diced
1/2 cup Maradol papaya, diced
1/3 cup organic red bell pepper, sliced in thin strips
2 tablespoons cilantro, chopped
Directions
Mix first five ingredients together and set aside.
Combine in a small bowl chutney, mustard and the 1 tablespoon lime juice; mix well.
Add chutney mixture to tomato mixture for dressing.
In medium bowl, combine remaining ingredients.
Add dressing and gently toss to coat. For an elegant presentation serve salad in a half of an avocado, pit removed.
