Saturn Peach, Arugula and Plumcot Salad

Ingredients

  • 3 tablespoons raspberry vinegar
  • 1/2 teaspoon Dijon mustard
  • 5 tablespoons olive oil
  • 1 pinch sugar
  • 1/4 teaspoon salt
  • 1 pinch pepper
  • 5 cups arugula, leaves torn
  • 4 Flavorosa plumcots, sliced
  • 1/4 cup pine nuts, toasted
  • 2 ripe Saturn peaches, sliced

Directions

  1. Toast pine nuts for 5-8 minutes in 350 degrees F oven or toaster oven.
  2. Combine the vinegar, mustard, olive oil, sugar, salt and pepper; mix together well.
  3. Arrange arugula, plumcots, and peaches in bowl.
  4. Combine the dressing with the salad. Sprinkle with pine nuts.
