Ingredients
1/2 leeks, sliced in half moons
1 organic carrots, sliced in half moons
3 sprigs Italian parsley
3 sprigs dill
1 pound salmon fillets, pin bones removed
1 tablespoon capers
2 slices Meyer lemon, wheels
1 tablespoon butter
2 sprigs thyme
Directions
Preheat oven to 400 degrees F. Cut 2 large heart-shaped pieces of parchment paper.
In the center of one piece of parchment, place leek, carrot, parsley, dill and one wheel of lemon.
Top with salmon fillet and season with salt and pepper.
Add butter, capers, lemon wheel and thyme sprigs.
Top with remaining sheet of parchment and seal edges by folding sides over together, retaining the heart shape.
Place package onto baking sheet.
Bake for 10 minutes. Cut parchment open, careful not to burn yourself with the escaping steam.
