Roasted Gemstone Potatoes with Caramelized Shallots and Cipolline Onions

Ingredients

  • 2 pounds Ruby Gold potatoes, quartered
  • 1 tablespoon organic garlic, roasted and chopped
  • 4 cups medium shallots, diced
  • 4 cups cipolline onions, sliced
  • 2 tablespoons chives, thinly sliced
  • 2 tablespoons thyme, chopped
  • 2 tablespoons canola oil

Directions

  1. Preheat oven to 375 degrees F.
  2. In a roasting pan, coat potatoes with oil, salt and pepper.
  3. Roast potatoes in oven for about 30 minutes.
  4. In a sauté pan, add 1 tablespoon oil. Heat for 15 seconds.
  5. Add onions and sauté for 2 minutes on high heat.
  6. Add garlic and shallots and sauté for 30 seconds.
  7. Add chives and thyme to sauté pan. Pull from heat.
  8. Toss potatoes with mixture. Season and serve.
