Roasted Fingerling Potatoes and Garlic

Ingredients

  • 24 fingerling potatoes
  • 1 teaspoon olive oil
  • 1 teaspoon Szechwan peppercorn
  • 18 cloves fire-roasted garlic
  • 6 sprigs thyme

Directions

  1. Combine all ingredients in baking dish and mix well.
  2. Bake, uncovered, in hot oven at 350 degrees F for about 45 minutes or until potatoes are tender and browned, stirring during cooking. Serve.
