This is a great side dish to go along with a hearty protein such as beef or pork roast.

Ingredients
- 1 1/2 pounds Baby Dutch Yellow potatoes, halved
- 6 sprigs thyme, stemmed
- 6 sprigs rosemary, stemmed
- Extra virgin olive oil as needed
- Fresh ground black pepper to taste
Directions
- Preheat oven to 425 degrees F.
- Toss all ingredients in a large bowl.
- Place the ingredients on a sheet pan.
- Season with salt and pepper.
- Roast in the oven until golden brown and fork-tender.
