Roasted Baby Dutch Yellow Potatoes with Fresh Herbs

This is a great side dish to go along with a hearty protein such as beef or pork roast.

Ingredients

  • 1 1/2 pounds Baby Dutch Yellow potatoes, halved
  • 6 sprigs thyme, stemmed
  • 6 sprigs rosemary, stemmed
  • Extra virgin olive oil as needed
  • Fresh ground black pepper to taste

Directions

  1. Preheat oven to 425 degrees F.
  2. Toss all ingredients in a large bowl.
  3. Place the ingredients on a sheet pan.
  4. Season with salt and pepper.
  5. Roast in the oven until golden brown and fork-tender.
