Roast Beef Tortilla Wraps

Ingredients

  • 4 large tortillas
  • 8 leaves organic romaine lettuce
  • 1 pound lean roast beef, thinly sliced
  • 1/4 cup pepperoncini peppers, sliced
  • 1 organic red bell pepper, seeded and thinly sliced
  • 2 cloves garlic, peeled and minced
  • 1 can black olives, sliced
  • 1 4-oz. package alfalfa sprouts (4 ounce package)
  • 1 large organic tomato, seeded
  • 8 slices low fat swiss cheese
  • Salt and freshly ground pepper to taste

Directions

  1. Brush the tortillas with the wrap dressing. Make sure to cover the entire surface all the way to the edges.
  2. Place 2 lettuce leaves across the bottom edge. Now place 1/4 of the remaining ingredients except for the salt and pepper on top of the lettuce.
  3. Season with salt and pepper.
  4. Roll it up as tight as possible, cut in half and place on a serving plate. Repeat for remaining tortillas.
