1 small organic yellow onion, finely diced (for the dressing)
1 ripe organic avocado
1/2 cup olive oil
Salt and fresh ground black pepper
Directions
To prepare the salad, mix the rice, shredded carrot, chopped onion, and chopped tomato.
Lay the mixture on a bed of lettuce.
To prepare the dressing, mash the avocado and add the olive oil, lemon juice, and diced onion; combine until well-blended. Season with salt and pepper.
Pour the dressing over the salad and garnish with chopped fresh parsley. Serve.
