Rasta Rice Salad with Avocado Dressing

Ingredients

  • 2 cups rice, cooked
  • 2 cups organic carrots, coarsely shredded
  • 2 large organic yellow onions, finely chopped
  • 2 medium organic tomatoes, peeled and chopped
  • Organic leaf lettuce
  • Organic parsley (for garnish)
  • 1/4 cup lemon juice
  • 1 small organic yellow onion, finely diced (for the dressing)
  • 1 ripe organic avocado
  • 1/2 cup olive oil
  • Salt and fresh ground black pepper

Directions

  1. To prepare the salad, mix the rice, shredded carrot, chopped onion, and chopped tomato.
  2. Lay the mixture on a bed of lettuce.
  3. To prepare the dressing, mash the avocado and add the olive oil, lemon juice, and diced onion; combine until well-blended. Season with salt and pepper.
  4. Pour the dressing over the salad and garnish with chopped fresh parsley. Serve.
