Puffed Rice Cookie Rounds

Ingredients

  • 3 tablespoons unsalted butter
  • 12 ounces marshmallows
  • 6 cups puff rice cereal
  • 1 3 ounce package dried cranberries
  • 1 3 ounce package dried blueberries

Directions

  1. In a sauce pan, melt the butter and the marshmallows, stirring constantly.
  2. In a large bowl, mix together the cereal and the dried berries.
  3. Add the melted mixture to the berry mixture; stir well to combine.
  4. Spread the mixture onto a sheet pan covered with parchment paper. It should be about 1-inch thick. Let cool.
  5. Once cool, using a 2 1/2 or 3-inch ring cutter, cut out the cookies. Make sure to cut the cookies as close as possible to minimize waste. Save the cookie scraps as snacks.
