Pipian De Pollo (Chicken with Pipian Sauce)

Ingredients

  • 1 chicken (4-5 pounds)
  • 3 cloves garlic, peeled
  • 1 bay leaf
  • 2 jalapeno chiles
  • 1/4 cup masa harina
  • 5 pound pumpkin seeds or squash seeds
  • 4 large dry red chiles of your choice
  • 2 cloves garlic, peeled (for the pipian sauce)
  • 2 tablespoons extra virgin olive oil
  • 1 quart chicken broth

Directions

  1. Rinse the chicken and pat dry with paper towels.
  2. Place chicken in a large pot and cover with 1 inch of water.
  3. Add garlic, bay leaf, and jalapenos; bring to a boil.
  4. Lower heat and simmer about 1 to 1 1/2 hours or until chicken is tender.
  5. To prepare the pipian sauce, lightly brown the masa, seeds, and chiles and 2 cloves garlic with the lard in a saucepan about 5 minutes.
  6. Remove from the pan and cool.
  7. Blend together in food processor or blend until smooth.
  8. Add back to the pan.
  9. Stir in the chicken broth and simmer until well-blended.
  10. Add the cut-up chicken; simmer for 10 minutes more and serve.
