Ingredients
2 1/2 cups cold water
1 pound organic sweet potatoes, peeled and cut into 1/2-inch cubes
1/4 cup sugar
3 tablespoons crystallized ginger, chopped
1 organic mango, peeled, seeded and diced
1 banana, peeled and cut into 1/4-inch slices
3 ounces longans, chopped
1/4 cup pine nuts, toasted
Directions
In a pan, combine the water and sweet potatoes; bring to a boil.
Simmer for 10 minutes.
Add the sugar and ginger; mix well.
Continue cooking until the sweet potatoes are tender on the outside and slightly crunchy in the center, about 10 more minutes.
Spoon the sweet potato mixture into 4 shallow bowls.
Top with mango, banana, pine nuts, and longan. Serve warm or at room temperature.
