Organic Sweet Potatoes and Longan with Candied Ginger

Ingredients

  • 2 1/2 cups cold water
  • 1 pound organic sweet potatoes, peeled and cut into 1/2-inch cubes
  • 1/4 cup sugar
  • 3 tablespoons crystallized ginger, chopped
  • 1 organic mango, peeled, seeded and diced
  • 1 banana, peeled and cut into 1/4-inch slices
  • 3 ounces longans, chopped
  • 1/4 cup pine nuts, toasted

Directions

  1. In a pan, combine the water and sweet potatoes; bring to a boil.
  2. Simmer for 10 minutes.
  3. Add the sugar and ginger; mix well.
  4. Continue cooking until the sweet potatoes are tender on the outside and slightly crunchy in the center, about 10 more minutes.
  5. Spoon the sweet potato mixture into 4 shallow bowls.
  6. Top with mango, banana, pine nuts, and longan. Serve warm or at room temperature.
