Olives with Peppers

Ingredients

  • 6 organic bell peppers
  • 1/4 cup olive oil
  • 4 tablespoons capers
  • 4 tablespoons green olives, chopped
  • 1 1/2 teaspoons wine vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon oregano, chopped or 1/4 teaspoon dried oregano
  • Salt and fresh ground black pepper to taste

Directions

  1. Cut peppers into 1/2-inch slices.
  2. Sauté peppers in olive oil until soft.
  3. Mix in the capers, green olives, wine vinegar, sugar, and oregano.
  4. Season with salt and pepper; simmer for 15 minutes.
  5. Chill.
