Norwegian Smoked Salmon Salad

Ingredients

  • 3/4 pound smoked salmon, broken into bite-sized pieces
  • 1/2 large organic sweet yellow onion, quarter-sliced and separated
  • 1 organic red bell pepper, diced
  • 3 tablespoons olive oil
  • Lemon juice to taste
  • Dill to taste
  • 4 heads Bibb lettuce, cut in half and hollowed out by removing small inside leaves
  • Baguette bread slices or toast points

Directions

  1. Combine all ingredients except lettuce.
  2. Spoon mixture into center of each lettuce half.
  3. Serve with accompanying toast points or fresh baguette.
