Kale with Ginger and Garlic

Ingredients

  • 2 tablespoons olive oil
  • 2 cloves organic garlic, crushed
  • 2 ounces ginger root, grated
  • 12 ounces kale, washed
  • 2 ounces California raisins

Directions

  1. Remove the center core of the kale and finely chop the leaves. This can be done in a processor, but the kale should not be cut too finely.
  2. Heat a wok and add the oil.
  3. When hot, add the garlic and ginger; stir for a few seconds until the aroma is released, and then add the kale. Stir quickly over high heat until kale is just wilted.
  4. Add the raisins and serve.
