Italian Spring Salad

Ingredients

  • 4 cups spring salad mix
  • 1 medium yellow bell pepper, cut into strips
  • 1 small red onion, separated into rings
  • 1/4 cup black olives, sliced
  • 1 roma tomato, cut in 1/2-inch cubes
  • 2 tablespoons Parmesan cheese, grated
  • Black pepper
  • 2 tablespoons red wine vinegar
  • 4 teaspoons olive oil
  • 1 tablespoon water
  • 1 clove organic garlic, roasted and finely minced
  • 1/2 teaspoon dried oregano, crushed

Directions

  1. Whisk together the red wine vinegar, water, garlic, and oregano.
  2. Slowly stream in the olive oil, while continuing to whisk.
  3. When well-combined, toss in spring mix, bell pepper, onion, olives, and tomato.
  4. Garnish with Parmesan and black pepper.
