Honey Glazed Barbecue Spareribs

You can barbecue these ribs over hot coals or roast 'em in the oven!

Servings: 4-6

Ingredients

  • 4 lbs. lean pork spareribs
  • Water
  • Salt and pepper
  • 1/2 cup honey
  • 1/4 cup lemon juice
  • 2 teaspoons lemon peel, grated
  • 2 teaspoons ginger root, grated
  • 1 clove garlic, minced
  • 1 teaspoon rosemary, crushed
  • 1/2 teaspoon red chilies, crushed
  • 1/2 teaspoon ground sage

Directions

  1. Preheat oven to 450 degrees F.
  2. Completely cover spareribs with water in a large pot or deep skillet and bring to boil, uncovered, over medium heat.
  3. Simmer 4 minutes, then drain liquid, reserving it for stock for later use, if desired.
  4. Season both sides of spareribs with salt and pepper and place on rack in roasting pan.
  5. Cover loosely with aluminum foil and bake for 15 minutes.
  6. Combine remaining ingredients; mix well.
  7. Reduce oven temperature to 350 degrees F.
  8. Brush spareribs with honey mixture and bake 1 more hour or until fully cooked, brushing with honey mixture every 15 minutes.
  9. For Barbecue: Boil spareribs as described above. Season both sides of spareribs with salt and pepper and place on barbecue grill over hot coals.
  10. Cook approximately 30 minutes per side brushing each side generously with honey mixture twice during last 15 minutes of cooking time.
