Holiday Rum Fruit Cake

Ingredients

  • 1 3 oz. package dried cranberries
  • 1 3 oz. package dried blueberries
  • 1 3 oz. package dried tart cherries
  • 1 3 oz. package dried pineapple rings, diced
  • 1 2 oz. package dried strawberries, diced
  • 1 tablespoon all-purpose flour
  • 1 package yellow cake mix
  • 1 package instant vanilla pudding mix
  • 4 eggs
  • 1/2 cup whole milk, cold
  • 1/2 cup rum

Directions

  1. Preheat the oven to 350 degrees F. Butter and lightly flour a 10-inch loaf pan.
  2. Toss the dried fruit with the flour to coat.
  3. Mix together the cake mix and the remaining ingredients until creamy.
  4. Fold in the dried fruit and pour into the prepared loaf pan.
  5. Bake in the oven for 1 hour to 1 hour and 15 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool for 5 minutes. Remove from the pan and cool completely on a wire rack. Makes 1 4 pound cake.
