1 teaspoon organic lemon or lime juice, freshly squeezed
2 organic tomatoes, finely chopped
1/2 onion, finely chopped
1/2 clove garlic, peeled, mashed and minced
1 jalapeno chile, finely chopped
2 tablespoons cilantro, finely chopped
2 ripe organic avocados
Directions
Mix together all the ingredients, except the avocados, in a bowl and sprinkle with a little lemon or lime juice.
Cut the avocados in half, remove the seeds and scoop out the flesh with a spoon, making sure to scrape the skins clean.
Mash the pulp with a fork and add it to your mixture.
Mix everything well, making sure that you don't make it too smooth. The texture remains a little coarse, which is why it is not a good idea to use a food processor for this dish.
Spoon it into a serving bowl, sprinkle some chopped cilantro over it and serve with tortilla chips. Serve it as an accompaniment to a meal or, better still, as a lovely starter.
