Ingredients
1 pound lean ground beef
1 package taco seasoning mix
Canola oil as needed
8 corn tortillas
1/2 head lettuce, shredded
2 Roma tomatoes, diced
4 New Mexico hatch chiles, roasted, peeled, seeded and diced
1 small can sliced black olives, drained
2 cups shredded cheddar cheese
Directions
Prepare the beef according to the taco seasoning mix package.
Heat the oil in a frying pan.
Using tongs, carefully fry the tortillas to make the taco shells.
Fill the prepared shells with the meat, lettuce and the rest of the filling ingredients, including any you may desire, such as sour cream.
