Ingredients
2 green Plantain bananas, peeled
Canola oil as needed
Salt and pepper to taste
Directions
Using a very sharp knife or a mandolin, slice the plantains into very thin discs.
Pour about 2 inches of oil into the bottom of a heavy frying pan.
Heat the oil to 350 degrees F.
Fry the plantain chips until crispy and golden brown.
Drain chips on paper towels and season immediately with salt and pepper. Guacamole and salsa make great dipping sauces for these chips.
