Fiber-Full Banana Bread (Fat-Free)

Ingredients

  • 2 pounds ripe bananas
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 tablespoon vanilla
  • 2 1/2 cups whole wheat flour
  • 2/3 cup Flame seedless raisins or Thompson seedless raisins
  • 1/2 cup sugar

Directions

  1. Preheat oven to 350 degrees F.
  2. Coat three 6-inch loaf pans with a nonstick vegetable oil spray.
  3. Mix the bananas, sugar, and vanilla in a food processor.
  4. In a separate bowl, mix the flour, baking soda and baking powder.
  5. Fold flour mixture into the banana mixture.
  6. When thoroughly blended, add the raisins.
  7. Divide the batter evenly into the loaf pans
  8. Bake for 1 hour.
  9. Cool and remove from pan before slicing. You can freeze loaves for use later.
