Ingredients
- 1 cup rice
- 2 quarts boiling water
- 1 1/2 cups sugar
- 1 cup orange juice
- 1/4 cup lemon juice
- 1 cup pineapple juice
- 1 cup organic pineapple, cut into 1/4 inch cubes
- 1/4 teaspoon canela (cinnamon sticks), ground to powder
- 4 cloves
- 3 tablespoons orange peel, grated
Directions
- Wash the rice in several changes of water.
- Boil the 2 quarts water in a saucepan.
- Add the rice. Cook for 35 minutes or until extremely soft.
- Force the rice and liquid through a sieve or puree in a blender.
- Combine the sugar, orange juice, lemon juice, and pineapple juice in a saucepan.
- Cook until syrupy, about 10 minutes.
- Add the strained rice, pineapple cubes, cinnamon, cloves and orange peel.
- Bring to a boil.
- Remove the cloves.
- Chill and serve very cold, garnished with additional fresh pineapple or other fresh fruit.
