Cold Rice Drink (Fresco De Arroz)

Ingredients

  • 1 cup rice
  • 2 quarts boiling water
  • 1 1/2 cups sugar
  • 1 cup orange juice
  • 1/4 cup lemon juice
  • 1 cup pineapple juice
  • 1 cup organic pineapple, cut into 1/4 inch cubes
  • 1/4 teaspoon canela (cinnamon sticks), ground to powder
  • 4 cloves
  • 3 tablespoons orange peel, grated

Directions

  1. Wash the rice in several changes of water.
  2. Boil the 2 quarts water in a saucepan.
  3. Add the rice. Cook for 35 minutes or until extremely soft.
  4. Force the rice and liquid through a sieve or puree in a blender.
  5. Combine the sugar, orange juice, lemon juice, and pineapple juice in a saucepan.
  6. Cook until syrupy, about 10 minutes.
  7. Add the strained rice, pineapple cubes, cinnamon, cloves and orange peel.
  8. Bring to a boil.
  9. Remove the cloves.
  10. Chill and serve very cold, garnished with additional fresh pineapple or other fresh fruit.
