Ingredients
- 4 boneless pork chops
- 5 large organic limes
- 1/2 cup barbecue sauce
Directions
- Squeeze juice from 1 lime; mix with sauce.
- Pour half of the sauce mixture into large resealable plastic bag.
- Add pork chops and seal bag. Marinate in refrigerator at least 15 minutes. Refrigerate reserved sauce mixture.
- Meanwhile, preheat grill to medium heat.
- Cut each of the 4 remaining limes into 4 slices each.
- Remove meat from marinade. Discard marinade.
- Place 8 of the lime slices on the grill and top with the meat. Brush with reserved sauce mixture.
- Grill meat in covered grill 5 minutes. Turn meat over.
- Add remaining 8 lime slices to grill. Continue cooking until meat is cooked through, turning occasionally and brushing with the reserved sauce mixture.
- Remove meat and limes from grill. Discard lime slices under the meat.
- Serve remaining lime slices with meat.
