Chilled Raspberry Soup

This is a great finish for a meal on a hot summer day.

Skill Level: Beginner

Ingredients

  • 4 cups raspberries
  • 1 ripe organic banana
  • 1 1/2 cups orange juice
  • 1 cup plain yogurt
  • 6 tablespoons organic low glycemic agave syrup
  • Mint leaves (for garnish)

Directions

  1. In a blender, whip all of the ingredients, except for the mint, until smooth.
  2. Refrigerate mixture for at least 1 hour.
  3. Serve the soup in small bowls and garnish with the mint leaves.
