Cherry Hazelnut Cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, firmly packed
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 pinch kosher salt
  • 1 2/3 cups semisweet chocolate chips
  • 1 cup dried tart cherries
  • 1 cup hazelnuts, chopped

Directions

  1. Preheat the oven to 350 degrees F.
  2. With an electric mixer, cream the butter and granulated sugar until very light and fluffy.
  3. Add the brown sugar, eggs and the vanilla; mix until well combined.
  4. In another bowl, combine the flour, baking soda and salt.
  5. Gradually add the flour mixture to the butter mixture.
  6. Fold in the chocolate, cherries and hazelnuts to the butter mixture.
  7. Using a spoon, drop tablespoon-sized portions of the cookie dough onto ungreased cookie sheets.
  8. Bake in the oven for 10-12 minutes or until lightly golden brown. Let cool on wire racks. Yields 4 dozen 1 ounce cookies.
