Carrot & Apple Juice

Ingredients

  • 3 medium carrots, roughly chopped
  • 3/4 cup water, boiling
  • 1 1/2 cups apple juice

Directions

  1. In a small saucepan cook carrots, covered, in the 3/4 cup boiling water about 20 minutes or until very tender. Cool.
  2. Transfer carrots and cooking liquid to blender container.
  3. Add apple juice.
  4. Cover, and blend until carrot is smooth.
  5. Add additional apple juice to make of desired consistency. Chill. Makes 3 (3/4-cup) servings.
