Caramel Apple Bread Pudding

Ingredients

  • 4 tablespoons unsalted butter, softened
  • 1 cup brown sugar
  • 8 ounce brioche, sliced
  • 2 organic Fuji apples, cored and cut into 1/2-inch dice
  • 3 tablespoons organic golden raisins
  • 1/4 cup organic apple cider
  • 3 cups milk
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 cup crème fraîche

Directions

  1. Preheat the oven to 350 degrees F.
  2. Butter a 2-quart casserole or souffle dish and spread the brown sugar evenly over the bottom.
  3. Butter the bread generously. Stack it and cut it into 2-inch squares.
  4. Toss the bread with the apples, raisins and cider. Place in the casserole on top of the sugar.
  5. Whisk the milk, eggs, and vanilla together; pour over the bread.
  6. Bake the pudding 40-45 minutes in a preheated oven until a knife inserted in the center comes out clean. Baking times can vary with the depth of the baking dish. Serve warm with some of the cinnamon and creme fraiche.
