Braised Baby Artichokes

Ingredients

  • 20 baby artichokes, quartered
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1 clove organic garlic, minced
  • 1/2 cup white wine
  • 2 tablespoons lemon juice
  • 1 teaspoon organic lemon zest
  • 1 tablespoon organic parsley, minced

Directions

  1. Prepare artichokes.
  2. Heat large sauté pan and add oil.
  3. When oil is slightly smoking, add garlic and stir for 1 minute; do not brown.
  4. Add artichokes and cook, stirring constantly until they begin to brown.
  5. Add wine and lemon juice; cover and simmer until tender about 5 minutes.
  6. Remove artichokes to a serving bowl and reduce remaining liquid by half.
  7. Add butter and cook until melted.
  8. Pour mixture over artichokes.
  9. Garnish with lemon zest and parsley.
