Baked Sweet Potatoes with Dried Bourbon Whiskey Apricots

Ingredients

  • 3 ounces dried apricots, chopped
  • 1/2 cup Bourbon whiskey
  • 4 sweet potatoes, peeled and roughly chopped
  • Extra virgin olive oil as needed
  • 1/2 cup brown sugar, firmly packed
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon real vanilla extract

Directions

  1. Preheat oven to 350 degrees F.
  2. Place apricots and whiskey in a small bowl and let soak.
  3. Toss the potatoes in the olive oil and place in a single layer on a cookie sheet.
  4. Roast potatoes in the oven until fork-tender.
  5. Place the potatoes in a large bowl and add the rest of the ingredients, including the apricots; mash until mixture is smooth.
  6. Place the mixture in a baking dish and cook until heated through. Add a little sweetness by covering the top with a layer of mini marshmallows just before the end of cooking, if desired.
