Baby White Potatoes with Herbs and Lemon Olive Oil image

Ingredients

  • 2 pounds baby white potatoes, cut into 1-inch pieces
  • 1/4 cup extra virgin olive oil
  • 1/2 cup red onion, chopped
  • 1/2 cup organic red bell pepper, chopped
  • 1/4 cup organic lemon juice, freshly squeezed
  • 2 tablespoons oregano
  • 2 teaspoons mint, chopped
  • 2 teaspoons salt
  • 3/4 teaspoon ground black pepper

Directions

  1. Steam potatoes just until tender, about 10 minutes. Transfer potatoes to large bowl.
  2. Add oil to potatoes and toss to coat.
  3. Mix in onion, bell pepper, lemon juice, oregano, mint, salt and pepper. Can be made 4 hours ahead, covered and chilled; let stand at room temperature 1 hour before serving.
