Baby Dutch Yellow Potatoes Stuffed with Hummus imageThese potatoes are especially good when topped with caviar, chopped olives or chopped tomatoes.

Ingredients

  • 1 bag Baby Dutch Yellow potatoes
  • 1 container hummus

Directions

  1. Boil potatoes in salted water until fork-tender. Do not overcook potatoes. Cool.
  2. Cut top third off of potato and just enough off of the bottom so that it can stand upright. Scoop out insides without collapsing the sides.
  3. Put hummus into a piping bag fitted with a fluted tip and pipe hummus into cavity.
