Amber Ginger Ale

Ingredients

  • 3 cups water
  • 1/2 cup ginger root, peeled and grated
  • 2 tablespoons organic lemon juice, freshly squeezed
  • 2 tablespoons pure vanilla extract
  • 1/2 cup sorghum syrup
  • 2 quarts sparkling water or carbonated water
  • Ice cubes

Directions

  1. Bring ginger and water to a rapid boil in a 2 quart saucepan over medium high heat.
  2. Boil 10 minutes. Remove from heat.
  3. Strain ginger through a fine sieve, and pour liquid into a 1 quart jar.
  4. Stir in lemon juice, vanilla, and sorghum syrup.
  5. Let cool. Store syrup in refrigerator for up to 2 weeks.
  6. To prepare the ginger ale, add syrup to sparkling or carbonated water.
  7. Add ice and stir. Makes 1 1/2 pints. (For 1 serving, add 1/4 cup of syrup to 8 ounces sparkling or carbonated water.)
