Stuffing Lovers Only

This is for any stuffing lover like me out there. I absolutely love Thanksgiving! And aside from the general feeling of togetherness of the holiday, I'd have to say that the stuffing might be my favorite part. My friend Matt and I were talking about all of the Thanksgiving goodies and recipes, and we began talking about the leftovers. Turkey chowder, turkey sandwiches, and stuffing pancakes...WHAT? STUFFING PANCAKES? Matt explained that his mom always makes stuffing pancakes - she heats up some butter in a skillet (like it already, huh?), then adds a scoop of leftover stuffing and smashes it down into a pancake. She pan-fries both sides so they are crispy and the stuffing is heated throughout. Next, she plates and serves them with warm gravy over the top! How great does that sound? I am definitely going to try this on Friday...I think I smell a new Thanksgiving tradition for my home!
