When it comes to cooking, I'm lazy - no doubt about that. And now that summer's here, my laziness factor has more than quadrupled! I am in no mood for heavy cooking! I want to eat foods that are simple, yet refreshing.

And now is the perfect time to take advantage of all the wonderful summer fruits and vegetables out there! Below are two easy-as-pie side dishes to cool your palate. And, they're ultra healthy with no cooking required!
